

The Leaves are Falling

Ahhhh the sounds, sights and aroma of fall are finally here. In Texas that means that we are only reaching the high 80's during the day. I have two little oak trees in a pot on the back patio that my wife planted with acorns that we had brought back with us from our stint in New Jersey. These trees are only about a foot tall but the leaves are huge. They are starting to change color. Before long the little trees will shed their leaves and we will know that it is officially Fall. Here in Texas that can only mean that the "First day of Enchilada" is quickly approaching us. The First day of Enchilada is second only to "The First Day of BBQ" that greets us in the spring. When you get that first real cold spell that sends you scurrying to find your jacket means that it is time to get in the kitchen and make that first batch of enchiladas. Now for those of you who might be wonderin' just what an enchilada is........well, let me tell you. An enchilada is a corn torilla, filled with cheese and onions, topped off with a killer mexican red sauce, topping all that with more cheese and baking in the oven for about ten minutes. Served on a plate with some pinto beans and spanish rice makes for one good mess-O-eating.
Add a flour tortilla slathered in butter and you got yourself one heck of a start for a case of what we call "frog bloat". We are fortunate here in Texas that we are pretty much able to BBQ all year round. So with that plate of enchiladas I might add a slab of BBQ'd beef fajitas. It just can't get much better than that.
